MODULE 2:  ON THE tropical SPICE food TRAIL

​Wandering through the garden opens the eye and a real education on the plants and spices (so peaceful and beautiful) that we use on the course.  The cooking class with Chef Austin is amazing.  He is so patient and walks you through the recipes step by step, checking that your food is going well and that it is to your taste.  Finish the course with a walk through the gift shop bulging with all sorts of spices and gifts to bring home.

Manti, Turkish Dumplings with Ground Meat, Onion and Spices
These delicious tiny treasures, Manti or Mantu, dumplings with spiced ground meat and onion, is one of the all time favorite  dishes in Turkey. In especially Anatolia, family members gather to prepare the dough and fill the tiny dough squares with the filling together; it is a bit of a labor of love, so it is great to get together for making it, and so worth the effort. The marriage of the melt-in-the-mouth dumplings with garlic yoghurt sauce and spice infused olive oil is simply irresistible. Tangy Sumac, red pepper flakes and dried mint infused in olive oil all add another layer of deliciousness and work greatly with garlic yoghurt as the sauce for manti.

Kafta, Lebanese BBQed Beef
The kafta is a happy little lamb, beef or chicken meatball, filled with onion, parsley, breadcrumbs and spices.  These guys are barbecued on skewers or served in a gravy.

Cuban Mojo Marinated Pork
No holiday table in a Cuban household is complete without this delectable pork dish. Make extras to serve in your Cuban sandwich or to add to your quinoa salad for an easy lunch later in the week.

Jamaican Curry Goat
Curry goat is another favourite on the island. Jamaican curry is a little different from the traditional Indian variety. It’s also a little spicier.

Caribbean Jerk Spiced Chicken Wings with Sweet Pineapple Jerk Glaze
Caribbean Jerk Spiced Chicken Wings, crispy on the outside, juicy on the inside, smeared in an island jerk run then showered in the most delicious jerk sauce.  This flavour combination is mad addictive.  You will not be able to stop eating these wings.  That are that good!  In fact they are finger-licking GORGEOUS!

Tortilla
This homemade flour tortilla recipe produces warm and soft tortillas perfect to eat the tortilla with butter! It's so good, you just heat up the tortilla and then spread butter all over one side of the tort and then roll it up it's so good!  Great to also wipe up any sauce left over from a satisfying meal.

Puerto Rico Flan de Queso (Cheese Flan)
​Flan is a traditional Puerto Rican dessert that is creamy, like a custard or cheesecake, and covered in a home-made caramel sauce.  Though vanilla is the original flavor, you can also find flans in chocolate, coconut and Nutella. It's also delicious when topped with fresh fruit and cream.
