MFK-GARDENS NURSERY HERBS n BERRIES FARM
Herbs are more than just for seasonings!
When we cook with herbs, we often follow recipes that call for small amounts of dried herbs, like in chili or spaghetti. This is because we tend to think of herbs as “seasonings” rather than another type of edible plant. While dried herbs have concentrated flavors, many fresh herbs are much milder and can be eaten in larger quantities, just like leafy greens. Fresh, soft-stemmed herbs like parsley, basil, and dill can be used generously in salads and sandwiches, while herbs like mint, lavender, and rosemary can be added more frequently to drinks and desserts. Fresh herbs not only enhance flavor—they pack just as much nutrition as vegetables!

Benefits of eating fresh herbs:
Like green leafy vegetables, fresh herbs are packed with essential vitamins A, C, and K. They also contain polyphenols, powerful plant compounds known for their antioxidant and anti-inflammatory properties. Research shows that diets rich in polyphenols, found exclusively in plants, can help protect against cancers, cardiovascular diseases, diabetes, osteoporosis, and neurodegenerative disorders. These compounds also help reduce chronic inflammation, a key factor in many health conditions. While ongoing research continues to uncover more specific medicinal uses for herbs, their overall health benefits are undeniable. Add more fresh herbs to your diet today for a natural boost!

Do dried herbs have nutritional value?
When it comes to vitamin content, fresh herbs are better. Despite this, both fresh and dried herbs are naturally high in antioxidants. Whether you're cooking with a tablespoon of fresh herbs or a teaspoon or dried herbs, both will contain some nutritional value.

Ideas for eating more herbs on a regular basis:
- Make salads with herbs as the main ingredient (e.g., Tabbouleh).
- Substitute 1/2 of the greens in lettuce salads with herbs such as parsley, dill, and basil.
- Mix handfuls of fresh herbs into cold potato and pasta salads.
- Top soups with handfuls of fresh herbs.
- Garnish an entire dinner plate with fresh herbs.
- Make a sandwich with herbs rather than lettuce (e.g., grilled cheese with basil).
- Add fresh herbs to drinks (mint lemonades and rosemary ice teas, fresh chamomile in hot tea).
- Use fresh herb sauces in pasta or on top of cooked meats (pesto in pasta; fresh mint sauce on cooked lamb).
- Sprinkle lavender, rosemary, and mint leaves on cakes, ice creams, and fruit cocktails.
PROJECT 2024/25:
As part of our brand-building process, we are extending our horticulture seedlings production centre to produce select herbs and berries as seedlings, saplings and for cut and sell. These are herbs that are not easy to find in the market. These will be produced without the use of chemicals, and when ready, cut, washed, packaged, branded and supplied to stores.
We will be kicking off productions in late summer 2024 and be full-fledged herbs farm the next spring season in 2025. We will be producing the following herbs lemongrass, rosemary, celery, chives, oregano, parsley, coriander, mint, spring onions, basil and red onions.
For berries these include for now strawberries and blackberries (we expect them to come online by February 2025. In future these will include blueberries and raspberries.
If you want supplies of herbs at your store, call or app us at: 73961421 or email us at: sales_enquiries@myfarmhouse kitchensbw.com.
