In cooking a sauce is a liquid, cream, or semi-solid food served on or used in preparing other foods.  Sauces are not normally consumed by themselves; they add flavor, moisture, and visual appeal to a dish. Sauce is a French word taken from the Latin salsa, meaning salted.

Add as a sauce base to any Italian dish or as an accompaniment to your meal.  Makes your meal even more appetizing.

SLOW-ROASTED ROMA TOMATO SAUCE
​WITH GARLIC

The kitchen smell heavenly as the sauce sit roasting in the oven using just plucked tomatoes from our farm garden mixed with garlic and fresh herb.  By the next morning, the sauce begins to tastes from just out of this world.  Now, did I say heavenly?  A long, slow roast for your tomatoes lets their flavor slowly concentrate into a chunky sauce.  This sauce bursts with the flavors of summer; yet it's simple enough to let the tomatoes shine through.  The fat in the butter helps to carry and lift the tomatoes' flavor.  It is all you need to rouse and lift up another mundane evening meal.

cayenne mango hot sauce

Everyone has a favorite hot sauce. Perhaps it's Tabasco or Cholula.  But if every once in a while, you need something a bit more flavorful, fruity, and homemade, this is the perfect hot sauce for you.  Diced mango is combined with spicy cayenne peppers for a perky sauce.

Ten Creative Ways to Use Mango Pepper Sauce (or any hot sauce):
  1. Pour a dash over vanilla or chocolate ice cream! ...
  2. Baste the meat on your grill. ...
  3. Pair it with mac & cheese, either on top or in the mixture itself! ...
  4. Make guacamole with it! ...
  5. Mix it into hummus for a little added kick.
  6. Add it to ground meat for tacos or burger patties.
  7. Make compound butter.

passion fruit sauce

Demand in Europe for passion fruit juice concentrate is five times US demand, even though it offers compelling benefits for the American consumer. Every significant brand in Europe has a prominent passion fruit based beverage and every multi-vitamin drink in Europe (one of their most popular beverages) includes passion fruit. Europeans have been using passion fruit for more than 30 years as the essential flavor in the beverage industry.

Passion Fruit is a unique, colorful, egg-shaped fruit. It is a characteristically flavorful, aromatic, and refreshing tropical fruit which makes it the ideal ingredient for a number of sophisticated applications as well as traditional applications.
Passion fruits contain numerous small, black wedge-shaped seeds that are individually surrounded by deep orange-colored sacs that contain the juice, the edible part of the fruit. It is this juice, which is naturally concentrated, that is extracted and further concentrated.

Passion fruit is nutritionally rich. It is a very good source of dietary fiber, vitamin A, and potassium, and, like many fruits, is low in sodium and yields zero saturated fat and cholesterol.
Passion fruit is also believed to reduce the risk of cancer due to plant compounds, or phytochemicals, such as carotenoids and polyphenols, both of which are found in abundance in passion fruit juice.

HOMEMADE RED CHILLI PASTE

Looking for a flavour explosion? Our extra hot chilli paste packs a punch that will leave you wanting more!

This homemade red chilli paste is a very handy basic to have in your fridge. It is a staple in Asian kitchens and is used in so many different ways: as a condiment, a marinade and an all purpose cooking ingredient.

The key to this homemade chilli paste is in the frying of the paste.  The longer the cooking time, the deeper the aroma and flavour, and the darker the colour.

How to use the Chilli Paste:
  • as a marinade (think roast and barbecue – meat and vegetables)
