21 POINT MFK CATERING TASK CHECKLIST:
PRE-PREPARATION TASKS
- Receipt of client requisition
- Client Event Needs Coordination and Analysis and provision of initial Estimate
- Development of catering event concept, and finalization of inventory list and production schedule on issue of invoice and order confirmation
- Securing of booking order with 20% of invoice value by 1st payment plan one month before production start date
- Development of and ensure adherence of client initial balance (50%) of 2nd payment plan two weeks before the start of production start
- Provision of a fully-equipped operational commercial kitchen
- Provision of transport arrangements
- Procurement of raw ingredients of prescribed quality standards
- Hiring of professionally trained kitchen aid staff
- Hiring of professional chefs
- Provision of requisite utilities, water and power
PREPARATION TASKS: - Conduct of pre-event kitchen preparation process, including adherence of safety and cleanliness standards
- Conduct of cooking of the agreed menu by required pax and by prescribed food handling and safety standards
- Ensure completion of 3rd client payment (30%) plan by stipulated date. Any non-compliance become the immediate subject of late payment penalty fee
SERVING TASKS: - Transport of cooked items to site of event venue to reach by the prescribed setting up time
- Setup of food stations, guest cutlery and personal effects to prescribed descriptions and standards by before serving time
- Hiring of disciplined, well-mannered and professional food servers and ensure food are served by prescribed food safety standards and prescribed serving time
POST-EVENT TASKS: - Cleanup of food stations, cutlery and serving equipment at site
- Return of all equipment to source
- Ensure payment of all tax obligations are met
- Offering of Hostess Thank you Gift
